Macaroni Salad (Granny's)
Classic macaroni salad is an easy dish made with elbow macaroni, veggies and a tangy mayonnaise dressing. It's the perfect cold pasta salad for feeding a crowd at potlucks, summer parties and picnics. Classic American macaroni salad recipes are made with elbow macaroni noodles, red onions, red bell peppers and celery. Some people also add hard-boiled eggs, ham, tuna, or cheese. There is no wrong way to make it.
1 lb box elbow macaroni, cooked and drained
1 large green pepper, diced
1 large onion, chopped
4 carrots, shredded
1 can Eagle brand evaporated milk
1 cup vinegar
1 cup sugar
2 cups Hellmann's mayonnaise
1 tsp. sea salt
½ tsp. black pepper, freshly cracked
Cook the pasta according to the pkg directions. While the pasta cooks, prepare the dressing. Combine all ingredients in a medium-sized bowl and mix to combine evenly.
Once the pasta is cooked to your liking, drain thoroughly and then add to the dressing. Mix to coat the noodles and refrigerate.
Keep refrigerated for at least 2 hours in order for the flavours to meld.
