Broccoli Slaw with Maple Mayonnaise Dressing

Broccoli Slaw:
1 (12 oz) pkg broccoli slaw
1 broccoli crown (2-3 cups bite-sized florets)
1 medium apple, cored and diced
2 green onions, sliced on the bias
⅓ cup dried cranberries
⅓ cup almonds, toasted, sliced

Maple Mayonnaise Dressing:
1 cup mayonnaise
¼ cup apple cider vinegar
2 Tbsp. pure maple syrup
sea salt
black pepper, freshly ground

Maple Mayonnaise Dressing:
Place all ingredients into a medium bowl and whisk until smooth. Store any leftover into an airtight container and store in the fridge for 1-2 weeks.

Broccoli Slaw:
Place all ingredients except for the almonds in a large bowl. Toss with enough of the dressing to coat.

Top the salad with the almonds just before serving.

Makes 6 servings.


Cook's Notes:  This salad may be made in advance - just add the almonds right before serving so that they keep their crunchy texture. Salad keeps well for 2-3 days in the fridge in an airtight container. Customize this salad with whatever fruits are in season and sub the almonds with pepitas for nut allergies.
