Coleslaw (Pennsylvania Dutch)

american-pennsylvania-coleslawSometimes it's nice to have a non-mayonnaise coleslaw like this one from Lizzie's Amish Cookbook. Interestingly, "coleslaw" comes from the Dutch "koolsla" meaning cabbage salad. Also, kohl is a German word for cabbage.

1 medium head green cabbage, shredded (about 8 cups)
1 cup red cabbage, shredded
4-5 carrots, shredded
1 cup mayonnaise
2 Tbsp. cider vinegar
½ cup sugar
1 tsp. sea salt
¼ tsp. black pepper, freshly ground

In a large bowl, combine cabbage and carrots; set aside. In a small bowl, combine all remaining ingredients; pour over cabbage mixture. Toss well and refrigerate overnight.

Makes 16 servings.
