Balsamic Vinaigrette with Bacon
I love the sweet and salty combination of this vinaigrette. And who doesn’t love bacon? I used balsamic vinegar but apple cider would work just as well. In fact, use any vinegar you like!
5 thick bacon slices, cut crosswise into ½" pieces
5 Tbsp. extra-virgin olive oil
¼ cup balsamic vinegar
3 Tbsp. shallots, minced
1 Tbsp. garlic, minced
1 Tbsp. brown sugar
Cook bacon in heavy large skillet over medium heat until crisp. Using slotted spoon, transfer to paper towels.
Remove skillet from heat. Reserve 3 Tbsp. drippings in skillet; mix in oil. Whisk vinegar, shallots, garlic and brown sugar in small bowl. Add to drippings in skillet. Stir over medium-low heat just until warm.
Season with salt and pepper. Serve warm.
