Fish Sauce (Mexican Baja Sauce)

mexican-bajasauceThis Baja sauce is one thing guaranteed to make your fish tacos amazing. With a delicious, unique flavour and simple ingredients, you’ll be making it over and over.

½ cup mayonnaise
½ cup sour cream or Greek yogurt
2 Tbsp. lime juice, freshly squeezed (~ 1 lime)
½ tsp. garlic, minced or ⅛ tsp. garlic powder
1 tsp. chili powder
½ tsp. ground cumin
¼-½ tsp. ground cayenne pepper
sea salt
black pepper, freshly ground

In a bowl, combine the mayonnaise, sour cream or Greek yogurt, lime juice, minced garlic, chili powder, cumin, cayenne pepper, salt and pepper.

Whisk the ingredients together until well blended and smooth. Alternatively, you can use a food processor or blender for a smoother consistency.

Taste the sauce and adjust the seasonings according to your preference. Add more lime juice, spices, or salt and pepper as desired.

Cook's Notes:

Serve Baja sauce as a condiment for fish tacos, seafood dishes, or as a dip for chips. Feel free to customize the recipe to your taste.

If you prefer it spicier, you can increase the amount of cayenne pepper or add some chopped jalapeno peppers or hot sauce.

If you enjoy a herby flavour, you can add a Tbsp. or two of freshly chopped cilantro. Enjoy your homemade Baja sauce with your favourite dishes.

What is Baja Sauce? Baja sauce is a tangy, creamy sauce and delicious condiment often associated with dishes from the Baja California region of Mexico. It typically combines ingredients like mayonnaise, sour cream, lime juice and spices. Taco Bell contributed to its widespread popularity. If you were a fan, you’ll love this copycat Taco Bell recipe.

It is most commonly beloved as Baja fish taco sauce to complement Baja fish tacos. I also love it with my spicy fish tacos and fish taco slaw.

I LOVE how it offers a rich yet bright flavour with a hint of heat.

This slightly spicy sauce not only pairs well with seafood dishes but can also be used as a dip, spread, or drizzle for street-style soft chicken tacos, cheese quesadillas, crispy baked tacos and even juicy ground chicken burgers. The balance of creamy, tangy and spicy elements makes it a versatile and flavourful addition to Mexican recipes and beyond.

Variations and Substitutions:

Every good recipe has room for a little creativity. Let’s explore some ways you can add your own twist to the creamy taco sauce:

Avocado lovers: Blend in half an avocado for a creamy, rich texture with a hint of freshness.

Spice it up: If you’re after more heat, consider adding some minced jalapeño or a little bit of minced chipotle peppers in adobo sauce.

Herb infusion: Love herbs? Stir in some freshly chopped cilantro or oregano for a vibrant and herby touch.

Lighten it up: For a lighter version, swap in light mayo and Greek yogurt.

Make-Ahead and Storage Tips

Got a busy schedule but craving that delicious sauce? No worries, I’ve got some tips to help:

Batch it up: This sauce tastes even better when the flavours meld, so feel free to whip up a batch in advance.

Stay fresh: Store your it in an airtight container in the refrigerator for up to a week.

Mix before use: The ingredients may separate over time. Give it a good stir or a quick shake before serving.

Spot check: If the sauce seems too thick after storage, loosen it up with a dash of lime juice or water.

How to Serve:

While most famously as used as Baja fish taco sauce, this tasty condiment complements a huge variety of dishes. Before Taco Bell Baja sauce was discontinued, it was used in the Cheesy Gordita Crunch and the Baja Chalupa among other things. I love to use it as a perfect finishing touch on so many things, like:

Tacos: Whip up some easy, soft homemade corn tortillas. A classic choice, drizzle this sauce over this recipe for the best fish tacos for a tangy topping. I love to whip up a batch of Baja sauce for chicken tacos, too.

Dipping: Use as a dip for chips, fries, or vegetable sticks.

Fajitas, burritos, game day nachos and wraps: Add an easy flavour boost to all your favourite mexican-inspired dishes.

Burgers: It’s a delicious way to enhance meat, veggie and even air fryer turkey burgers with a touch of zest.

Grilled dishes: A great addition to grilled meats and vegetables.

Salads: Use it as a creamy Mexican dressing on taco salads topped with thinly sliced cabbage, shredded cheese, black beans, red onion and red bell peppers. I love making a batch of healthy taco meat using this chicken taco seasoning.
