Sauce Beurre Meuniére (French Brown Butter Sauce)
This simple sauce enhances the natural sweetness in foods — try it on steamed cauliflower or asparagus or with sautéed fish.
¼ cup (½ stick) butter
1½ tsp. lemon juice, freshly squeezed
¼ tsp. sea salt
1 Tbsp. flat-leaf fresh parsley, chopped
Cut butter into pieces and in a small heavy skillet melt over moderately low heat. Simmer butter until golden brown with a nutty aroma, about 5 minutes. Remove skillet from heat and immediately add lemon juice, freshly squeezed, salt, parsley, and pepper to taste, swirling skillet to incorporate (butter will foam).
Serve sauce immediately.
