Poor Man’s Oysters Rockefeller (Air Fryer)

2 cans smoked oysters, drained of oil
1 cup fresh spinach
1 Tbsp. garlic paste
¼ cup whipped cream cheese, softened
¼ cup Italian cheese blend, shredded
2 Tbsp. butter
¼ cup panko breadcrumbs
sea salt
black pepper, freshly ground
hot sauce
Cajun seasoning

Prepare the Oysters:
Open can and drain oil from the oysters really well and pat dry while keeping the oysters in the tin.

Prepare the Topping:
Steam spinach in microwave for 30seconds. Then in a mixing bowl, combine the steamed spinach, softened cream cheese, and garlic. Season with salt and pepper to taste. Mix well until all ingredients are evenly incorporated.

Assemble the Oysters:
Using a spoon or a small knife, carefully mound a generous amount of the spinach and cheese mixture onto each oyster, covering it completely. Add 1 Tbsp .of butter to each tin along with some cheese and panko breadcrumbs.

Bake:
Transfer the baking dish to an air fryer and cook for 5 minutes on 450°F (230°C) or until the topping is golden brown and bubbly, and the oysters are heated through.

Serve:
Once done, remove the Poor Man's Oysters Rockefeller from the air fryer and let them cool for a few minutes. Serve them warm as a delicious appetizer or snack with your favourite bread or crackers.
