Sardine Melt Sandwich
You've probably tried a tuna melt, but have you tried a sardine melt? This mouthwatering sandwich is made with lightly smoked sardines, whipped cream cheese, fresh dill, lemon juice, capers and a finely diced shallot. Toasted over a griddle until it's melted and decadent. Truly delicious.
Cream Cheese Mixture:
1 (4.4 oz) can wild sardines, packed in extra-virgin olive oil
1 tub whipped cream cheese
2 Tbsp. fresh dill, chopped
3 tsp. white onion or shallot, finely diced
2 Tbsp. capers, chopped
1-2 tsp. lemon juice, freshly squeezed
sea salt
black pepper, freshly ground
Sandwich:
4 slices seeded artisan bread
4 Swiss cheese slices
1 tsp. capers
1 tsp. fresh dill
Cream Cheese Mixture:
Mix everything together and refrigerate ideally overnight to let the flavours develop.
Sandwich:
Cut two slices of bread, add 1 slice of Swiss cheese and spread a good amount of cream cheese mixture on 1 slice. Top with more capers and fresh dill, top with the second slice of cheese and finally with the second slice of bread. Spray olive oil on both sides and toast on a preheated griddle until lightly golden brown.
