Baked Perch with Parmesan and Herbs

1 lb ocean perch, cod or haddock fillets
2 Tbsp. dry breadcrumbs
1 Tbsp. Parmesan cheese, grated
1 tsp. dried basil leaves
½ tsp. ground paprika
1 dash black pepper, freshly ground
1 Tbsp. butter, melted
2 Tbsp. fresh parsley, chopped
Move oven rack to position slightly above middle of oven. Preheat oven to 500°F (260°C/240°C fan, Gas Mark 10). Spray rectangular pan, 13x9x2", with cooking spray.
If fish fillets are large, cut into 4 serving pieces. Mix remaining ingredients except butter and parsley.
Brush one side of fish with butter; dip into crumb mixture. Place fish, coated sides up, in pan.
Bake uncovered about 10 minutes or until fish flakes easily with fork. Sprinkle with parsley.
Makes 4 servings.
