Broiled Parmesan Tilapia (Wyoming)
I love that simple Parmesan cheese brings such richness to an otherwise mild-tasting fish. It’s one dish where leftovers are never a problem!
½ cup Parmesan cheese, grated
3 Tbsp. butter, softened
2 Tbsp. mayonnaise
¼ tsp. dried basil
¼ tsp. black pepper, freshly cracked
1/8 tsp. onion powder
1/8 tsp. celery sea salt
4 (6 oz) tilapia fillets
Garnish:
4 lemon wedges
Preheat oven to broil. Coat a 15x10x1” baking pan with cooking spray.
In a small bowl, mix all ingredients. Arrange fillets on the prepared baking sheet. Spread cheese mixture over fish.
Broil 4” from heat 4-5 minutes or until topping is lightly browned and fish flakes easily with a fork, rotating pan halfway for more even browning.
Serve with lemon wedges.
Makes 4 servings.
