Fish Sticks

fishsticksThese homemade fish sticks are so easy to make. They are crunchy and delicious so you can forget the store-bought stuff.

2 white fish fillets (tilapia, cod, haddock etc), cut into ¾" wide pieces
½ tsp. kosher or sea salt
¼ tsp. black pepper, freshly ground
1 large egg
2 Tbsp. half and half cream
¼ cup all-purpose flour, unbleached
1/3 cup plain breadcrumbs
¼ tsp. garlic powder
¼ tsp. Italian seasoning

Prepare Breading Station:
In one shallow dish, whisk egg and half and half; in another dish, place flour; in the last dish, combine breadcrumbs with garlic powder and Italian seasoning.

Season fish pieces with salt and pepper.

Dip each fish stick in flour first, then egg mixture, then finally in breadcrumbs. Coat evenly, shake off excess. Repeat with all fish pieces. Set them on a plate next to stove. Prepare another plate with a paper towel.

To Pan Fry:
Heat up ½ cup vegetable oil in a fry pan. Fry fish sticks in batches, until golden brown. Remove onto paper towel lined plate to absorb excess oil.

To Bake:
Preheat oven to 375°F (190°C/170°C fan, Gas Mark 5). Line a baking sheet with parchment paper.

Bake for 15-18 minutes or until crunchy and golden brown.

Makes 4 servings.


Cook's Notes: Substitute dried or fresh breadcrumbs for panko.
