Chili (Ground Bear)
You can serve this enchilada style or just straight from a bowl.
3 lbs ground bear meat
12-14 red chili pods
25 chili pod seeds
3 cloves garlic, diced
½ cup all-purpose flour, unbleached
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. sea salt
½ tsp. black pepper, freshly ground
¼ tsp. dried oregano
¼ tsp. dried cumin
3 Tbsp. butter
2 beef bouillon cubes
¼ cup onion
6 qt stock pot
Clean pods and put in blender with seeds. Add warm water and soak for 20 minutes. Once that is done, add in your cloves garlic and blend.
Brown your bear meat and then add that to the stock pot.
Once your meat is sitting in your pot, add in the rest of the ingredients. Add water until the pot is about three-quarters of the way filled. Mix everything together thoroughly.
Bring this to a boil, stirring constantly.
Once it reaches a boil, turn your temperature down and simmer with a lid on for one hour, followed by another hour without a lid.
Make sure to stir occasionally. In the words of my dad, "Now you have a masterpiece."
