Mutton and Hominy Stew (Native American Noqkwivi)
Compliments of the Navajo Nation. Traditionally served hot with fried bread and coffee.
10 pieces backbone mutton
1 large pot boiling water
8 oz dry roasted corn
Cut up the mutton for stew. Put water in a large pot and bring to a boil. Add the backbone of mutton and dry roasted corn and boil for 8 hours. Add 1 cup of water every hour until meat is tender.
Makes 6 servings.
