Candied Carrots

candiedcarrotThese candied carrots are easy to make for a delicious side dish for ham, roast beef, or chicken.

½ cup orange juice, freshly squeezed
½ cup sugar
2 small carrots, thinly sliced lengthwise (12 slices needed)

In a saucepan, bring the orange juice and sugar-a boil. Add the sliced carrots. Simmer until tender and translucent, about 8 minutes depending on thickness.

Let cool completely. Drain. Twist each carrot slice and arrange on the cake.
