Potato Cakes (Mashed)

mashedpotatocakesPotato cakes are an easy way to use up leftover mashed potatoes or to add a new twist to your potato side dishes. So simple to do, you’ll be snacking on their golden crispy edges and tender middles before they hit the table. They are great with any meal or as a snack. Quick to make with only a few ingredients. Kids of ALL ages love 'em.

2 cups mashed potatoes
1 cup all-purpose flour
1 onion, diced or grated
1 egg
½ tsp. Kosher salt
½ tsp. black pepper, freshly ground
½ cup vegetable oil, or as needed

Garnish:
green onion, chopped
sour cream

Peel and dice potatoes and add to a large pot. Cover with water and salt the water. Bring to boil over medium heat, and cook until tender. Drain the potatoes and return to hot pot to dry. Transfer potatoes to a bowl and mash.

Mix mashed potatoes, flour, onion, egg, salt and pepper together until batter consistency.

Heat vegetable oil in a skillet over medium heat. Drop 2-4" circles of potatoes into skillet and gently press down with a fork or spatula to flatten a bit. Cook until golden brown, about 4-5 minutes per side. Remove with a slotted spoon and drain on paper towels. Repeat with remaining batter.

Serve with green onions and sour cream, if desired.

Makes 4 servings.
