Potato Cakes (PEI Charlottetown)

Prince Edward Island (PEI) is the potato capital of Canada and these potato cakes a local favourite throughout the maritime provinces.

¼ cup pork, finely chopped
¼ cup bacon, finely chopped
1 onion, finely chopped
4 PEI potatoes, grated
1 egg
¼ cup flour, unbleached
sea salt
pepper, freshly cracked

Fry pork, bacon, and onion. Mix in potatoes, egg, flour, and seasonings.

Drop by Tbsp. onto a well greased skillet and brown on both sides.
