Potato and Onion Bake
Make impressing your guests even easier with this delicious Skinny Potato and Onion Bake. All you need is an oven, potatoes and a few other simple ingredients to make this side dish - it's so easy, yet so impressive and delicious.
3 Tbsp. butter, divided
2 large Russet potatoes, sliced ⅛" thick
2 medium yellow onions, peeled and sliced ⅛" thick
½ cup Parmesan cheese, freshly grated
½ cup cheddar cheese, shredded
kosher or sea salt
black pepper, freshly ground
¼ cup whole milk
Preheat oven to 325°F (165°C/140°C fan, Gas Mark 3). Grease a 2.5 L, or larger, round casserole dish with 1 Tbsp. of the butter.
Place a layer of potatoes on the bottom of the dish. Top with a thin layer of onion slices, a little shredded cheese, then season with a pinch of salt and some pepper. Continue in layers like this, gently pressing down as the layers build up, until all ingredients are used, ending with potato slices. Pour the milk over the top and dot the remaining butter over the top.
Bake for about 1½ hours, until the potato feels tender when pierced with a knife. If the dish starts to brown too much, cover it with foil about ½-⅔ of the way through the cooking time.
