Steamed Potatoes (Aboriginal)

6 strips bacon, crumbled
1 yellow onion, quartered
1½ cup water (375 mL)
sea salt
black pepper, freshly ground

Peel potatoes and slice them into a bowl with water. Heat a cast iron pan on medium to high heat and fry 6 strips of bacon until crisp.

Add diced onion and cook until translucent. Add potatoes and water and cook until potatoes make a sauce. Add salt and pepper to taste.


Variation: add 1-1½ cups (250 mL-375 mL) of frozen vegetables.
