Mashed Potatoes with Cottage Cheese
Cottage Cheese Mashed Potatoes (high protein) - the perfect fall veggie side dish. The cottage cheese makes these potatoes SO fluffy. It also makes them less caloric than your standard mashed potato recipes. Plus, the cottage cheese also adds protein. So good you need to try these.
1 Tbsp. sea salt
10 Yukon gold potatoes, peeled and diced
8 cloves garlic
¼ cup milk of choice, such as whole milk
1 cup cottage cheese
½-1 tsp. sea salt
½-1 tsp. black pepper, freshly ground
3 Tbsp. chives, finely chopped
Garnish:
2-4 Tbsp. butter
chives, finely chopped
Add potatoes and garlic to a pot of boiling water salted with 1 Tbsp. salt. Cook for 15-20 minutes, until both garlic and potatoes are fork tender. Remove the garlic a few minutes before the potatoes.
Add garlic, milk and cottage cheese to a blender. Blend until smooth.
Add potatoes to a large bowl. Add in chives and pour over cottage cheese mixture. Add in pepper and a pinch of salt. Using a potato masher, mash together the potatoes with cottage cheese and chives until everything is combined. If needed, give the potatoes a mix with a spatula to get everything combined.
Serve mashed potatoes with butter if desired.
