Potatoes and Applesauce (German Himmel und Erde)
Himmel und Erde is a traditional German dish originating as far back as the 18th century. Literally translated, the name of the dish means Heaven and Earth, derived from the old word for potatoes - Erdapfel. The dish consists of mashed potatoes that are paired with apple sauce. It is most commonly served with meat dishes, while purists insist on having a blood sausage on the side. In that case, the dish is sometimes referred to as Himmel, Erde, und Höllen (Heaven, Earth, and Hell). Today, there are numerous variations on the original recipe depending on the region, but the classic version is still the most popular in Rhineland, its place of origin.
Himmel und Erde (Heaven and Earth) is one of those wonderful German traditional recipes that goes so well as a main dish or a side. This is a mixture of mashed potatoes (from earth) and apples (from heaven). Often this is served with sausage or pork, but goes well with almost anything, even by itself because the flavours blend together unusually well. Himmel und Erde is usually covered with caramelized or crispy fried onions. Not only does it look great, but it tastes scrumptious.
1 lb starchy potatoes
1 lb cooking apples
2 Tbsp. butter
nutmeg
sea salt
black pepper, freshly ground
1-2 onions, sliced

Peel and cube potatoes into 1" cubes. Peel and thickly slice apples.
Cook potatoes and apples in boiling salted water until tender, about 10-15 minutes. Drain.
Mash until smooth and creamy, adding butter. Season with salt, nutmeg, and pepper.
Meanwhile, fry onion slices in about 2 Tbsp. butter (or oil) until crispy.
Serve onions on top of mashed mixture either as a main or side dish for sausages or other meats.
