Apple and Potato Mash (Irish)
This Irish mash-up of potatoes and apples makes a nice side dish for Corned Beef and Cabbage.
4 russet potatoes, peeled and chopped
2 apples, peeled and chopped
¾ tsp. coarse sea salt
4 Tbsp. butter
1 Tbsp. sugar
¼ tsp. fresh nutmeg, grated
Place potatoes and apples in a large pot; cover with water.
Season with coarse sea salt. Cover, and bring to a boil.
Cook until soft, about 20 minutes.
Drain. Add butter, sugar, salt and nutmeg. Mash until smooth.
Makes 4 servings.
