Hotchpotch (Dutch Hutspot)

dutch-hutspotA not so distant cousin for stamppot, hutspot is a Dutch word and dish that can be translated to English as "hotchpotch", which in my mind is exactly what the dish is - mashed potatoes, onions and carrots, and/or other vegetables. I suspect it's more of a fairly world-renowned Dutch dish than I first thought.

6 onions
6 carrots
8 potatoes
½ cup evaporated milk
¼ cup butter
kosher or sea salt
black pepper, freshly ground

Dice and boil onions and carrots for 20 minutes. Drain.

Boil peeled and quartered potatoes for 20-25 minutes, till tender. Drain and dry thoroughly.

Add onions and carrots mash well. Add salt, pepper, butter and milk. Mix.

Warm all together and serve hot.

Makes 8-10 servings.
