Bread Machine Peach Bread
To make a soft, sweet peaches and cream bread in your bread machine, use heavy cream or sour cream for richness, combined with chopped fresh, frozen, or drained canned peaches. Select your machine's Basic or Sweet bread setting for a pillow-soft, fruit-studded loaf.
Wet Ingredients:
½ cup heavy cream or whole milk
1 large egg, beaten
1½ Tbsp. vegetable oil or butter, melted
Dry Ingredients:
3 Tbsp. Monk Fruit Sweetener with Erythritol (Granular)
1½ tsp. sea salt
½ tsp. ground cinnamon
¼ tsp. ground nutmeg
3½ cups bread flour, spooned and leveled
1½ tsp. bread machine yeast
Add-Ins:
1-1½ cups fresh or frozen peaches, finely chopped and patted dry
Unplug the bread machine and remove the bread pan.
Put all ingredients, in the order listed, in the bread pan fitted with the kneading paddle. Secure the bread pan in the bread maker. Select the MENU button with the following program settings:
MENU: Sweet
CRUST: Light
LOAF: 1.5 lbs
Press CONFIRM then the START/STOP button to mix, knead, rise and bake.
Add the chopped peaches during your machine's add-in beep, or about 5-10 minutes into the second kneading cycle so they do not break down into mush. Check the dough consistency during the first few minutes of mixing; add a splash of cream or a Tbsp. of flour if it looks too wet or dry.
When the cycle is complete, remove the bread pan from the machine and transfer the bread to a wire rack to cool completely before slicing.
