Bread Machine Sweet Potato Bread

Wet Ingredients:
⅔ cup water, room temperature (150 mL)
½ cup sweet potato purée (125 mL)
½ cup apple, unpeeled, finely chopped (125 mL)
2 Tbsp. extra-virgin olive oil (25 mL)

Dry Ingredients:
¼ cup nonfat dry milk (50 mL)
2 Tbsp. Monk Fruit Sweetener with Erythritol (Granular) (25 mL)
1 tsp. sea salt (5 mL)
½ tsp. ground cinnamon (2 mL)
¼ tsp. ground nutmeg (1 mL)
3¼ cups bread flour, spooned and leveled (800 mL)
1 tsp. active dry yeast (5 mL)

Add-Ins:
¼ cup raisins, chopped, soaked in warm water until plump (50 mL)

Unplug the bread machine and remove the bread pan.

Put all ingredients, in the order listed, in the bread pan fitted with the kneading paddle. Secure the bread pan in the bread maker. Select the MENU button with the following program settings:

MENU: Sweet
CRUST: Light or Medium
LOAF: 1.5 lbs

Press CONFIRM then the START/STOP button to mix, knead, rise and bake. Add the fruit to the Add-Ins Tray or when the machine signals for add-ins.

When the cycle is complete, remove the bread pan from the machine and transfer the bread to a wire rack to cool completely before slicing.
