Peach Melba Crêpes
1 recipe Dessert Crêpes
8 oz cream cheese, softened
¾ cup confectioner's sugar
1 tsp. almond extract
½ cup seedless raspberry jam, warmed
1-15 oz can peaches, sliced, drained and cubed
whipped cream
Beat cream cheese, confectioner's sugar, and almond extract until smooth.
For each crêpe spread about 2 Tbsp. of filling. Fold in half and then in half again.
Place 2-3 crêpes on each plate with points touching.
Sprinkle about ¼ cup of peaches and drizzle with raspberry jam and top with a dollop of whipped cream.
